Chicago: Molly's Cupcakes

Molly's Cupcakes is so far my favorite place for cupcakes, so I was really happy to see that it was on AF's list:

The interior is super cute in pastels, with swing seats, a sprinkle station, and board games galore.  What's most impressive, however, is Molly's cupcake selection:

There are the regular cupcakes that you see in just about every bakery, but what really sets Molly's apart are their center filled ones.

Out of the two cupcakes we finally decided on, one was the salted caramel butterscotch:

It's a vanilla cake with butterscotch caramel pudding, salted vanilla buttercream, and caramel drizzle:

I really wish I had a cup of milk.  That cupcake was a little too much for me.  Especially with the buttercream frosting and the butterscotch filling.

The blueberry cheesecake cupcake was my favorite of the day:

Cutting it in half just about destroyed it:

But hey, you can still sort of make out the vanilla cake, infused classic cheesecake, cinnamon graham cracker crumbs, pastry cream, and glazed blueberries.  Surprisingly light for a cupcake.  The blueberries definitely help cut into the richness of the cream and cheesecake.

I love how moist Molly's cupcakes are.  Dry cupcakes have always been one of my greatest fears.  And let's be honest now, sometimes regular cupcakes get to be a bit...boring.  Well, center-filled cupcakes are never boring.  Getting to the filling is like unearthing a hidden surprise.  Never gets old.
