West Yellowstone: Firehole Bar-B-Que

We crammed a lot into our first day in Yellowstone National Park.  We hiked from Grand Prismatic Spring Overlook to Fairy Falls to Imperial Geyser and back.  The first time we reached the overlook, the morning mist was too thick to actually see the Grand Prismatic Spring.  We tried again on the way back and had much better results despite also having to deal with more people gathered there:


Of course we had to go take a closer look by taking a stroll along the boardwalk around the Grand Prismatic Spring.  

To finish the day, we hiked the South Rim Trail to Artist's Point.  You guys.  It was like a freakin' Bob Ross painting:


How surreal is that??

With lunch being simple Hawaiian roll sandwiches, we treated ourselves to a more filling dinner at Firehole Bar-B-Que:


Despite it being shoulder season for Yellowstone, the restaurant was pretty busy:


We started with a lb of brisket ($27) and a sausage link ($4.75):


We also got a full rack of ribs ($30):


All meats were served with white bread, pickles, onions, and sauce on the side.  We added on a pint of corn salad and a pint of mac n cheese ($7.50):


Sodas were $2.75 each.

We were frankly blown away by the food.  The brisket was fatty and juicy the way it should be.  The ribs were fall-off-the-bone tender.  But what really took the prize was the mac n cheese.  That was the creamiest mac n cheese I've ever had.  I've been chasing its shadow ever since.  

It's been over six months since our trip to Yellowstone and we still talk about that mac n cheese.

Would it be overkill to go back to Yellowstone not to see the park but to get that mac n cheese from Firehole?  Hm...might be worth it.
